Monday Meal Time!~ Cheddar Buttermilk Waffle BLT's

It's a Monday Meal Time!! So... I had a super busy weekend! On Saturday I had to go to my Grandma's birthday party but then I had to go to my Grandpa's birthday party. We got home around 9:00pm.
Sunday well... was a relax day. But it's Monday and I am sick:( But I made Cheddar Buttermilk Waffle BLT's! Yum!

 {Adapted By Joy The Baker}
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
pinch of black pepper
1 tablespoon granulated sugar
1/3 cup melted unsalted butter
2 large eggs
1 1/4 cup buttermilk
1/2 cup grated sharp cheddar cheese
For the Sandwich:
1/2 cup mayonnaise 
3 slices thick bacon, cooked
romaine lettuce leaves
First put all the waffle's ingredients in a bowl. Then whisk the batter. Next pour (about 2/3 cups at a time) on the waffle iron. Cook until brown.
(Makes 6 sandwiches) to finish it off put on the bacon, mayonnaise, lettuce leaves and tomatoes! ( Note: I did not put to tomatoes on mine)

Duct Tape Dog Leash

Hey Guys! How is your day? Mine? slow... So today I made a Duct Tape Dog Leash and I had two doggy to model for me. Dakota and Fudge ! BEST. DOGS. EVER. So try to make your own!

1: Find a dog leash and some colorful duct tape
2: Duct tape both sides of the leash
3:And you are done! Now take your dog for a walk!

Monday Meal Time- Baked Chicken Taquitos

Monday Meal Time

So how was your weekend? Mine? Great! Saturday, I got to hang out at the library and for Father's day we celebrated with a brunch. But made this too... Some yummy taquitos!

1 cup cooked shredded chicken
1/2 cups enchilada sauce
1 cup shredded taco blend cheese
6-8 flour tortillas ( fajita size)
1/4 cup plain Greek yogurt

There are two ways you can make this dish:
Mix the chicken with enchilada sauce, yogurt and cheese in a bowl. Then spoon about 1/4 cup of mixture onto taco shells and roll tightly.
Or, you can spoon each ingredient separately you like onto taco shell and roll rightly.  This is the way I did it, not everyone in my family likes enchilada sauce :)
For both options:
Place rolled taquitos on a greased baking sheet seam side down.  Bake in a preheated 425 degree oven for 10-15 minutes or until toasted.

Today I took a walk in my backyard with my mom and took some nature photos. They came out beautiful! With a some help with Picmonkey. I never knew what I could find in my backyard. I grow some crops/flowers in my backyard in a greenhouse. Do you grow anything? I am growing some lettuce, tomato's and flowers.

Monday Meal Time- Mac Daddy Mac n Cheese

Monday Meal Time

Hi Everyone Its Monday Meal time! Every Monday I will post a recipe
So try this yummy
Mac Daddy Mac n Cheese!


Mac Daddy Mac n Cheese
Adapted From Food Network


  • 3 TBSP butter
  • 2 TBSP flour
  • 4 cups cream
  • 1/2 tsp thyme
  • 3 cups shredded cheddar cheese
  • 1 lb penne pasta
  • for topping:
  • 1/2 cup bread crumbs
  • 4 slices bacon, cooked and crumbled
  • 2 TBSP butter, melted
  • 1 TBSP parsley

  1. Preheat oven to 350 degree. Grease a 9 x13 baking dish.
  2. Prepare pasta according to box directions.
  3. In a saucepan, melt butter.   Add in flour and thyme.  Cook for about 2 minutes
  4. Slowly add in cream.  Increase heat and let it cook for about 10 minutes to thicken.
  5. Add in cheddar cheese and stir until melted and smooth.
  6. Mix cheddar cheese sauce with cooked pasta and pour into baking dish.
  7. In a small bowl, mix together topping ingredients.
  8. Sprinkle on top of pasta.
  9. Bake for 20-25 minutes or until bubbly and lightly brown.
